This past week I had the great opportunity to sit in and watch the process of baking bread and pastries at the Great Harvest Bread Company in Thousand Oaks, California. Sergio and Aaron of Great Harvest work from 12 midnight until 7am baking bread for the next day. Great Harvest does not believe in freezing or using preservatives in their dough and make their bread from scratch every single day. Jim Costello, the owner of Great Harvest Bread Company was kind enough to explain the process and show me around their shop. I was there to mostly observe what they were doing so I only have a few pictures I snapped before I left.
